Cabbage “noodles” and kielbasa hold the noodles

22 Apr

Kielbasa was always a post Easter tradition in my family.  My mom, sister, and I indulged in slices with leftover decorated hard-boiled eggs while my dad complained about the distinct smell of “too much garlic”. I thought I’d pass on the tradition this year and introduce my kids to Hungarian kielbasa or kolbász, and what better way to do it than with cabbage noodles (another childhood favorite of mine!). Hopefully my dear great aunts won’t be too upset with me for omitting the ever “important” noodles!

Ingredients:
1 medium head cabbage, cut into long thin strips
1 small onion, finely chopped
1 tsp minced garlic
2 Tbsp butter or oil of your choice
salt and pepper to taste
1 large good quality kielbasa, cut

Melt butter, sauté onions and garlic until softened, add cabbage and sauté over medium heat until soft. Add kielbasa until heated through. Salt and pepper to taste, serve and enjoy! SO simple yet SO yummy!

Luckily my kids LOVED this, or else I could have easily eaten the entire pan. Cabbage may just be the next big noodle substitute next to zoodles in our family!

Best,

Heather
