here is one of my all time favorite snacks to make. this stuff is hard to not hoover the complete batch, but paired with coffee or an apple, it is really yummy.
Paleo “granola”
5 cups nuts and seeds (sliced almonds, pumpkin seeds, flaxseeds, pecans, sunflower seeds, etc; you can use whatever you want, but make sure you use at least 2 – 3 cups sliced almonds, as these take the place of what is normally oats)
1 cup banana chips (i kinda crush them down) -or- dried fruit of your choice (raisins, craisins, etc)
1 cup shredded unsweetened coconut
1/3 cup honey
1/3 cup coconut oil
2 tsp vanilla
2 tsp cinnamon
1 tsp nutmeg
1 tsp salt
Mix honey, oil, vanilla, cinnamon and nutmeg in a small saucepan and bring to a simmer on the stove. Let it cool slightly.
Place the nuts, seeds, banana chips, and coconut in a large bowl.
Pour the cooled honey mixture over the top. Mix it around to get everything covered.
Spread mixture over greased baking sheet and bake for 30 minutes at 300 degrees.
Allow the pan to cool and then put the mixture into a bowl.
Store in airtight container
making this as SOON as I get home from Dallas…so glad you two are doing this….
